Turkey, Mangetout & Peach Salad

Another one of my "I thought we had no functioning cooker" meals! I could also have called this triple poached turkey salad, sounds fancy right? In truth, that is what happened, but it wasn't fancy at all! I'd rather have fried it, and next time - I will! I really liked adding the fruit to this and the dressing goes so well with the meat and the peach!

Turkey, Mangetout & Peach Salad
(Serves 1, about 420 calories)

190g turkey fillet steak, cooked, and sliced
1/2-1 peach, cut into thin wedges
100g mangetout, sliced once lengthways
1-2 spring onions, chopped

Juice of 1/2 lemon or lime
1 tbsp honey
2 tbsp fresh, grated ginger
1 tbsp soy sauce
1/2 tbsp sunflower oil
1/2 tbsp sesame oil

- If you haven't cooked the meat already, do this as the first step, and prepare all the other ingredients in the meantime.

- Combine all the ingredients for the dressing, then the vegetables. Add the meat to the vegetables and tip in the dressing. Toss a good few times to make sure it's all mixed well.

Serve up! You could probably add a little more oil or dressing, or serve the dish over a little bit of noodles in place of half of the mangetout if you want to bulk it out a little, but it makes for a nice main course salad as it is.
