So I am pretty much settled into my new/old flat now, and yesterday I had a "not a birthday" party, with some friends around! More about later, now to a little salad I made the other day. I added extra beansprouts and some mushrooms to bulk it out a little, and it turned out really nice!
Thai Beef Salad
(Serves 1, about 460 calories)
1 steak, about 120g
Juice of 1/2 lime
1/2 tbsp sunflower oil
1 tbsp fish sauce
1/3 red chilli, deseeded and thinly cut lengthways into thin strips
150g beansprouts, washed
125g small button mushrooms, sliced or halved (optional)
A handful of basil leaves, torn
1 tbsp sweet chilli sauce + 1 tbsp to serve
- Cook, fry or poach the steak, and leave to cool.
- In the meantime, mix the lime juice, sunflower oil, fish sauce, chilli, and 1 tbsp sweet chilli in a small bowl.
- Then, mix the beansprouts, basil leaves, and mushrooms. Slice the steak and add to the mix, the pour over the dressing and toss lightly.
Ready to serve - Just remember to pour a little extra sweet chilli sauce over, aaaand dig in!
I have had this stupid cold for the last past days now...So the other night, I brewed up some hot water with lemon, ground ginger, honey aaaand finished it off with a couple of thin slices of chilli. I actually ate the chilli after I'd finished the drink! I couldn't taste the fiery-ness, which I suppose proves how much my taste buds had been affected by it!
So I thought the oven was broken, but it turns out that someone had just switched it off at the wall *facepalm*. I tried to make two cheesecakes, but failed miserably! So I went around the corner to my local shop called My Home Bakery, and they managed to have a chocolate and beetroot cake ready for me within 15 minutes!
My friend Katie brought her amazing home made banoffee pie, which I haven't had in SIX years! And lovely Emma brought these lovely little chocolate cups filled with chopped fruit, berries and some even had pistachios in them, win!
It really was delicious! I have always been wanting to try this combination, and was intrigued! The texture is really dense, but once you have some, it feels lighter than you'd think!
Aaaand I thought I would share a couple of snaps of my room now. The furniture there are mainly ones belonging to the flat, I love the little sign in the corner *smiles*
Oh, and not to mention the window sill where I can actually sit in and look out in the morning, perfect to go with my breakfast and start a new day!
