Here's a twist to your every day meatloaf, lots of little loaves! The sweet chilli and tomato topping works really well with the lamb mince, but feel free to use whatever mince you've got at hand.
I chose to serve it with potato mash, but you can chose to serve it with whatever you want!
Spiced Mini Meatloaves
(Serves 2, about 630 calories each)
For the meatloaves:
200g lamb mince (you can use any mince really!)
3 spring onions, finely chopped
2 garlic cloves, finely chopped
1 tsp cumin
1 tsp Tabasco sauce
1 tsp coriander
For the Tomato topping:
6 cherry tomatoes, chopped, pulp removed if you want
1 tbsp sweet chilli sauce
For the mash:
400g potatoes, peeled and sliced
50 ml milk
A good knob of light butter
Salt and pepper to taste
- Start by pre-heating the oven to 180-200°C. Prepare the potatoes so they're already sliced and ready to boil.
- Mix all the ingredients for the meatloaves in a medium bowl, divide between six muffin tins. Mix together the chopped cherry tomatoes and sweet chilli sauce, and top the mini meatloaves with the mixture. Place them in the oven for about 20-25 minutes.
- Boil up water and cook the potatoes for about 15 minutes, until tender. Drain, and add milk, butter, as well as salt and pepper, perhaps some onion powder, and mash the potatoes. Place the pan on low heat and heat through, ready for serving.
- Divide the mash between two plates, and top with three mini meatloaves each, and a drizzle of salt and pepper.
